Amatoxins are responsible for the large majority of fatal mushroom poisonings worldwide. The characteristic course has a latent period of six to twenty-four hours before symptoms begin, followed by apparent recovery, then liver failure days later. Amatoxins are heat-stable and are not destroyed by cooking, drying or freezing.
