Ambergris forms in the rectum, not the stomach, as a concretion around accumulated indigestible squid beaks bound in faecal material. It is found in a small minority of whales. Large masses can obstruct the gut and may be fatal; smaller ones are voided.

Nor is it simply faeces, though it leaves the same way: it is a concretion built around the sharp squid beaks the whale cannot digest or regurgitate, which is a rather good explanation for why an animal eating thousands of beaked cephalopods would need such a thing at all. The floating masses found on beaches have then spent years at sea oxidising, which is where the smell perfumers value comes from.
